Coconut, Chia and Smashed Berry Sundae

Ingredients

  • 20 g chia seeds 1½ tbsp
  • 1-2 tbsp maple syrup
  • 1 tbsp Udo’s Choice Ultimate Oil
  • Zest of 1 orange
  • Juice of 1 orange
  • ½ tsp pure vanilla extract
  • 400 ml coconut milk
  • Sundae Topping
  • Seasonal berries or frozen berries if out of season
  • Your favourite granola topping

Method

  • Mix chia custard ingredients together in a bowl, whisking for a few minutes to prevent seeds from clumping. Set aside for ½ – 2 hours so chia seeds fully absorb the coconut milk, ideally in the fridge.
  • Lightly smash or crush berries of choice with back of a fork, leaving some whole.
  • Layer a little of the chia mixture in the bottom of 4 small glasses, followed by a few berries and a little granola. Repeat the process and finally garnish with fresh mint or any edible green leaf.

  • Great for breakfast or brunch or as a dessert.
  • Use seasonal fruits such as stewed rhubarb, caramelized apples, banana or pineapple, or peaches or plums.
