Ingredients

  • 140 g whole almonds
  • 50 g dark chocolate 70%, finely chopped
  • 1 tbsp cacao
  • 3/4 tsp ground cardamon
  • ¼ tsp cinnamon
  • 200 g Medjool dates pitted weight, chopped small
  • 50 g pistachio nuts
  • 2 tsp vanilla extract

Method

  • Combine the almonds, chocolate, cacao, and spices in a food processor. Pulse until the mixture resembles fine breadcrumbs. Add the dates and pulse for about 30 seconds, or until the mixture is slightly sticky but still somewhat crumbly. Add the pistachios and vanilla extract, then pulse again until the mixture holds together when pressed between your fingers.
  • Roll the mixture into walnut-sized balls and place them on a parchment-lined tray. Chill in the fridge for 30 minutes. Once firm, transfer the balls to an airtight container and store in the fridge for up to three months or freeze for up to six months.
