Christmas Pie Energy Bombs

Stuck for Christmas gift ideas? Why not whip up some of these gorgeous energy bombs – definitely a crowd pleaser and can be made well in advance. They are also super delicious 🙂 Happy Christmas Everyone!

Ingredients

  • 100 g whole almonds roughly chopped
  • 70 g Medjool dates pitted weight, chopped small
  • 60 g Christmassy mincemeat Maggie’s recipe

Method

  • Combine the almonds and dates in a food processor, pulse until they resemble breadcrumbs.
  • Add Christmassy mincemeat pulse again in food processor. The mixture should be sticky when pressed between fingers.
  • Shape into walnut size balls and place onto a parchment lined tray and set aside in fridge.
  • These will keep for at least a month in an airtight container (that’s if you can keep them that long!)

Maggie's Tips

  • Vary nuts: Try pistachio, pecans or hazelnuts.
  • Don’t have time to make your own mincemeat! Source a good quality one from your local farmers market or deli.
