Ingredients
- 20 g chia seeds 1½ tbsp
- 1-2 tbsp maple syrup
- 1 tbsp Udo’s Choice Ultimate Oil
- Zest of 1 orange
- Juice of 1 orange
- ½ tsp pure vanilla extract
- 400 ml coconut milk
- Sundae Topping
- Seasonal berries or frozen berries if out of season
- Your favourite granola topping
Method
- Mix chia custard ingredients together in a bowl, whisking for a few minutes to prevent seeds from clumping. Set aside for ½ – 2 hours so chia seeds fully absorb the coconut milk, ideally in the fridge.
- Lightly smash or crush berries of choice with back of a fork, leaving some whole.
- Layer a little of the chia mixture in the bottom of 4 small glasses, followed by a few berries and a little granola. Repeat the process and finally garnish with fresh mint or any edible green leaf.
Maggie's Tips
- Great for breakfast or brunch or as a dessert.
- Use seasonal fruits such as stewed rhubarb, caramelized apples, banana or pineapple, or peaches or plums.
