Cottage Cheese and Avocado Breakfast Bruschetta with Dukkah and Manuka Honey Drizzle

Equipment

  • 1 toaster or grill pan

Ingredients

  • 4 slices of your favourite sourdough wholemeal or GF bread
  • 250 g cottage cheese or fresh ricotta 1 tub
  • 2 tsp lemon juice
  • 1 tbsp dill finely chopped
  • ¼ - ½ tsp Manuka honey plus extra to drizzle
  • Seasoning
  • 1 avocado

Instructions

  • Mix together cottage cheese, lemon juice, dill, Manuka honey and seasoning. Keep chilled until ready to use.
  • Toast or char-grill bread until golden. Halve the avocado, remove stone and thinly slice.
  • To serve: Spoon cottage cheese mixture equally over each slice of bread. Top with sliced avocado and sprinkle of dukkah. Drizzle with extra manuka honey.
  • Serve right away.

Maggie's Tips

  • Dukkah is a traditional Egyptian condiment of nuts, herbs and spices. It is used as a dip with bread and olive oil I sprinkle it over chicken, tofu, fish, salads, vegetables and so on
  • Instead of dukkah, sprinkle over some chilli flakes or sumac
  • For a more luxurious version add thinly sliced organic smoked salmon.
  • Gluten free option: Use GF bread
  • Low carb option: Use low carb bread
  • Dairy free option: Use a goats cheese or sheep's cheese if you can tolerate it.
